What is Hummus?

Hummus is a dip made out of boiled chickpeas or the kabuli channa. It is part of the Mediterranean appetizer Hummus with Pita Bread. Humus is usually called the Levantine dip made out of mashed chickpeas and mixed with some light spices clubbed with olive oil. Although Hummus is accompanied by Pita Bread giving it an Indian twist, it can also be served with a chapatti or bread.

Ingredient List to Make Humus

  1. ½ tsp red chilli powder
  2. 3 tbsp tahini (sesame seeds)
  3. 1 tsp cumin powder (jeera)
  4. Fresh parsley and coriander leaves
  5. ½ tsp pepper
  6. 3-4 cloves garlic, minced
  7. 2 cups chickpeas (kabuli chana)
  8. Salt to taste
  9. Olives
  10. 1 tbsp lemon juice
  11. 3-4 tbsp olive oil

Procedure to Make Humus

  • Start by soaking the chickpeas overnight, you may add baking soda (option). Strain the water and boil until tender
  • Blend the chickpeas in a mixer or a food processor.
  • Roast some sesame and blend it. You can also add the roasted seeds without blending them.
  • Add roasted garlic, cumin powder, chilies, lemon juice, and olive oil and blend it again.
  • Make a smooth paste and serve in a bowl. You can add parsley as a garnish.

Ingredients to Make Pita Bread

  1. 1 cup refined flour (maida)
  2. 1/8th teaspoon baking soda
  3. 3 tablespoon yogurt (curd)
  4. 2 tablespoons olive oil
  5. ¼ teaspoon salt
  6. 1 teaspoon sugar
  7. ¼ teaspoon baking powder

Procedure to Make Pita Bread

  • Add refined flour, oil, curd, salt, baking powder, and baking soda in a bowl. Using lukewarm water, start kneading the dough.
  • After the dough is kneaded smoothly, you may add olive oil, mix it gently and let it ferment for over 3 hours.
  • Once the dough is ready, make small the balls out of it and roll it in a thin sheet.
  • Cook in from both sides in a Tawa and sprinkle some olive oil over it.

Serve the thin sheets of Pita Bread in directly or the choicest shape with a blended Humus.
